In a clean dry bowl, sift the flour, sugar, baking powder and a pinch of salt and rub in the butter with your fingertips until the mixture looks like breadcrumbs.
In another bowl, mix the wet ingredients: that is, milk, whisked eggs and vanilla essence.
Mix both the wet and dry ingredients nicely with your hands to form a soft dough.
Preheat the oven to 185°C – 240°C. Grease a 22cm (base) round baking pan with butter and lightly dust with flour.
Cut the dough into any size ranging from mini to large and allow to rest for 30 to 40 minutes then bake them for 10 minutes under 350°C.
Unlike the cake, pancake, and other types of sweet pastries, the scone is often lightly sweetened and occasionally glazed with egg wash. It is also usually served with cream tea and jam.
Originally, scones are flat and circular in shape, but it can also be cut in triangular sections for serving purposes. Before the oven became the norm, scones are baked on griddles.
