The pork trotters or pig’s trotter as the culinary term for the foot of pigs goes, is used to prepare various dishes around the globe. It has become quite a famous dish since the late 2000s and now is prepared in several ways using different recipe and ingredients.

In a country like South Korea, some restaurants serve pork trotters boiled in a seasoned or soy sauce-based braising liquid known as “jokbal.” In some countries like South African and Nigerian restaurants, it is either braised with spices and herbs and savoured by locals or prepared as the stew, a spicy tomato sauce called dikgwatla. 

As a matter of facts, the pork trotter has more than twenty recipes and combinations with different names according to each country where it is cooked and eaten as the main course. It is also famous in Singapore.

Ingredients

1.  500g pork trotters

2. Salt

3. 15ml ground pepper

4. 15ml borrie compound Robertson spice

5. Half of a large onion, chopped

6. 4 tablespoons tomato paste

7. 15ml biryani masala

8. 500ml water

9. 45ml thick soy sauce

10. 2 tablespoons of cooking oil

11. 60ml paprika

12. 3 tbsp spring onion, finely chopped

Pork Trotters Stewed Recipe

Step 1

Cut the trotters into small pieces, wash in clean water, soak in cold water and salt to taste and cook to about 3 hours until the meat is tender and pliable to the teeth. You can use a pressure pot to make the cooking faster and not last up the stipulated hours and skimming off any froth regularly with a slotted spoon.

Step 2

Add the aromatics: chopped onion, soy sauce, ground pepper, biryani masala, paprika,  benny spice, spring onion, oil and ground pepper and cook for another 20 minutes.

Step 3

Fry the tomato paste in vegetable oil on low heat for about 15 minutes to reduce the sour taste and then add into the content in step 2.

The thick collagen texture of the pork trotters and its ability to absorb flavor make it the chosen base for stock.

Other ways of preparing the pork trotters besides the stewed method including oven cooked, roasting or barbecued, fried or just boiled.

The stewed pork trotter recipe is best served with boiled hot rice or yam. However, there are several other options to consider such as macaroni, noodles, spaghetti, vegetables: greens, beans, and mashed potato.
