Procedure

Mix the dry ingredients
This includes wheat flour, sugar, baking powder and salt. Sieve them in a separate clean, medium-size bowl a keep aside.

Mix the wet ingredients – whisk the eggs and mix with the milk and melted butter.

Add the wet mixture to the dry ingredients and gently stir them together with a wooden spoon/spatula to form a batter. Taking care, not to over mix until there are no lumps.

Preheat the frying pan or griddle over a medium to high heat. Coat the pan with little vegetable oil to prevent the batter from sticking to the pan or griddle.

Gently pour your pancake batter into the pan. To get a perfectly round shape, pour in one dimension, allowing the batter spread from the centre. Or use the spoon to spread the batter into a circle.

Reduce the heat and observe for when it begins to puff, then the top side of the pancake is ready to be flipped over to the bottom. Insert the frying spatula all the way to the centre of the pancake, lift quickly off the pan and flip it over.

When it is cooked, serve hot with any fruit of your choice – mango, strawberry, kiwi, avocado, banana etc.

NOTE: Since pancakes are better served hot, you can place them on a wire rack over a baking sheet and keep in a low heat oven (200-225°F) until ready to serve.

In case you’re making pancakes for a large crowd,  the method in the video below might make it much easier than frying in batches.
